Chicago’s Charlie Trotter’s is arguably one of the very best two or three restaurants in the country-and that prestige comes with an equally elite, some might say “pretentious,” atmosphere. I recently had the good luck of dining at Charlie Trotters thanks to the generosity of two friends I’ll call “dining companion #1″ and “dining companion #2.” Both dining companions have lived in New York and thus consider themselves to be experts of all things culinary, having sampled most of what that great city has to offer. It SHOULD have been a great evening; instead it was either a tragedy or a farce, depending on your perspective. Here are some suggestions on how NOT to behave at Charlie Trotters (or any other gourmet restaurant, for that matter):

1. Do not spend the three hours prior to your reservation at a sportsbar sampling many and varied brews.

2. Do not help yourself to a glass of wine while you wait five whole minutes to be seated.

3. Do not, after eating the second course, “Tasmanian Ocean Salmon with Orange Rind, Fennel Pollen & Trout Roe Vinaigrette,” tell your server that it was a bit “fishy.”

4. Do not call each other-loudly-“douchebag” and “asshole.”

4a. When dining companion #1 is asked by staff to soften his “booming voice,” dining companion #2 should not say “hey! What about me?”

5. Resist, please, please, resist the urge to order that second bottle of wine.

6. Do not fall asleep in your desert. Yes, it is cake and ice cream, but you are not a five year old at a birthday party.

Much to my delight, I was able to finish my meal in relative peace while dining companions numbers 1 and 2 dozed off. Dining companion #2 roused himself to take care of the enormous check and woke dining companion #1 with a solid punch to the arm. I watched with glee while dining companions numbers 1 and 2 were each assisted down the narrow stairway to the street by two Charlie Trotter’s employees, one on each side. I saw them into their cab (and off on their further debauch), then jumped in my own cab, happy to be going home, to bed, where one deserves to be after a ten course meal. I’m sure it was an evening that none of us, well, except dining companions 1 and 2, will soon forget.

How to determine the right fly for the right fish

“The right fly for the right fish is a #18 Adams with the hackle trimmed on the underside!” How about that for straight forward and to the point? Or if you prefer,….”The right fly for the right fish is anything in your box that is pink.” That was the response I got from Simon Bain in Andros Island. The fact of the matter is, this question is ridiculous. The right fly for the right fish is whatever the damn things are willing to eat at the time, plain and simple. I might add that this can and does change in as little as 15 minutes when fly fishing for trout, but may not change in 15 years for saltwater species. The point is still the same. Maybe only a recovered fly fishing guide like myself can appreciate the poetic simplicity of my answer but here is it anyway, “What’s good today, just might suck tomorrow.”

I once cast to a pod of rising trout for 30 minutes, changing flies about every 5, and never once had a single strike. I tried cripples, emergers, trailing shucks, iridescent, foam bodied flip flops, thingamajiggers, and just about every other thing you can think of and still not one single fish would even look at my fly. Finally I pulled out an on old Madison River midge pattern that was given to me by a guy named Greg Blessing. This little black midge pattern was no more than a piece of black rubber attached to a hook. No fancy wraps, no UV sparkle flash, no spent wing bubble butts, bead heads or googly eyes. Just a hook and a strip of rubber 1/4 inch long. And the fish ate. Fourteen beautiful trout in a row to be exact. I know because I only had one “Prophylactic Midge” in my box and we broke it off in the 14th fish’s mouth. The little black prophylactic midge had saved the day for me and at least for that moment, I was the hero. But here is the painful truth of the matter. I’ve never caught a single trout on that fly since and its not from lack of trying. I’ve cast that fly to hundreds of rising trout and no one wants it. I’ve tried to tie them in different sizes, colors, shapes, with different wraps. You name it, I’ve tried it to make that damn fly work and for the life of me, it was a one hit wonder.

For every great fly you have in your fly box, there are probably 10 “Prophylactic Midges”. These are flies that have worked at some point, but are unlikely to work again. Flies that have been passed over routinely for the newer and more recent additions. These also might include flies that have too big of tails, too small of heads, or too fat of bodies. Flies that are “close” in color, or “”just a bit” too big, or are little over hackled or under dubbed. Whatever their specific deficiency, you have for some reason relegated these misfit flies to the back of the fly box only to come swooping in to save the day when you are truly stumped.

The right fly for the right fish is exactly the question we should be asking I guess. It’s not ridiculous at all to assume that some misfit trout will eat some misfit fly. Maybe there are bone fish swimming around looking for over dubbed, fat, chubby little bait fish. Maybe trout do like the color of belly button lint in their mayfly imitations, or pubic hair in the place of wings on a caddis. Either way, I think it is safe to assume that the right fly for the right fish might simply be whatever you have tied on the end of your line. After all, I’ve been saved by a prophylactic midge, and I bet most other fly fishermen have as well. Fish whatever fly you’ve got, becasue it just might suck tomorrow.

Getting Around & Out of Panama City

If you have never been to Panama you may have an image of bumping around dirt roads in an old bus with chickens and pigs in the back seat! Remember that Michale Douglas movie, Romancing the Stone? Although it’s true in most Latin American countries it’s not so in Panama. Just one of the many pleasant surprises is the ease with which you can get around. You have the options of plane, train, automobile and boat depending on where you are and where you want to go.

The Pan-American Highway (Carretera Panamericana), commonly known as the Inter-Americana, stretches from the Costa Rican border in the west across the country into the heart of the Darien province. There it stops about 50 miles from the Columbian border. The Darien Gap is this area along the border between Colombia and Panama. It is a lush rain forest with one of the highest degrees of bio-diversity in the entire world. This region, its wildlife, and its indigenous inhabitants are protected by the national reserve status in both countries.

The Pan-Am Highway is a real treat by Central American standards, and in some cases even North American standards! It is well maintained and there are plenty of food and gas stops all the way across the Isthmus. The trickiest part of driving in Panama is in the cities and getting out of Panama City itself. Many vehicles, including buses and taxis, are not well maintained so city driving can be an adventure. Taxis are so cheap I recommend getting about by cab within the city and then picking up your rental car when you are just ready to leave.

Getting out of the city can be fun too! The first time we drove into Panama City from Boquete it was a lovely drive and a breeze to make our way right to the Miramar Hotel on Avendia Balboa. Getting out was another story! We found ourselves circling in and out of Casco Viejo for over an hour before a helpful Panamanian motioned for us to follow her and led us to the Bridge of the Americas. Later we were told the easy, but unmarked route directly out of the city.

Here it is: Take AVENIDA BALBOA southwest along the Bay of Panama (BAHIA DE PANAMA). As you approach CASCO VIEJO watch for a Shell Gas Station on your right. Just past and beside the station take a right turn (N/NW). You will come to a busy intersection with a traffic light. Once you pass through the intersection get in the left hand lane and take the on-ramp. It seems a little odd because the ramp is on your left. It feels like you are going the wrong way up an exit ramp. Above you will see a sign, PUENTE DE LAS AMERICAS. The ramp will loop around and you will be traveling south west again along, AVENIDA DE LOS MARTIRES which will take you to PUENTE DE LAS AMERICAS (The Bridge of the Americas). This highway turns into the Pan-American highway and if you stay on it you will end up in Costa Rica!

For North – South driving from the Pacific Coast to the Caribbean side, across the continental divide there are only two routes. The Trans-Isthmian Highway will take you from Panama City to Colón and Portobelo. Closer to the west end of the Isthmus there is a wonderful highway which runs from the town of Chiriqui, just east of David, across the divide to Chiriqui Grande, Almirante and Changuinola on the Caribbean. I’m not sure what the name is but it is fairly well marketed. You will see a sign for Chiriqui when you enter this small community on your right watch for a nice paved road and the sign for Chiriqui Grande.

The Loopholes: Length of Stay, Deposits and Electricity

If you are staying for a month or year, the serviced apartment may charge you for electricity. Make sure that you negotiate this price to 6.5 Baht/Unit. A lot of times the apartment owners will charge 8 Baht/Unit for more profit. They only pay 3 or 4 Baht/Unit.

Be careful when signing leases; most require a 2 month deposit, and if you move out before your contract is finished you forfeit this deposit.

Make sure the serviced apartment has a laundry service, either in house or out of house. Most serviced apartments have coin operated laundry rooms as well as pick up services. More deluxe suites will have washing machine in the room. Note that most places do not have dryers.

How much Should I Pay?

This is a difficult question to answer, but the more facilities a serviced apartment has, the more it will cost. If a serviced apartment has a pool, gym and also functions as a 24 hour hotel, then the monthly price will be above 30,000 Baht.

The only drawback is the place doesn’t have a pool or gym, but thats the reason the price is so low and why its one of the best values in Bangkok.
